Ingredients
- Dough:
- 3 cups white flour
- 1 cup corn flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon yeast
- 1/4 cup vegetable oil
- 1/4 teaspoon white vinegar
- lukewarm water
- Sauce:
- grated tomatoes
- 1 finely chopped onion
- 3 cloves garlic, crushed
- a drizzle of olive oil
- salt
- paprika
- thyme
- oregano
- Filling:
- Fontina cheese
- 3 types of grated cheese: kashkaval / mozzarella / emmental
- fresh basil
- olives
- green bell pepper
Method
- We start by preparing the dough.. Sift the plain white flour with the corn flour and mix them together.
- Add the sugar, salt, and yeast and mix, then add the oil and rub it in until the flour absorbs all the oil.
- Add a drop of white vinegar, then gradually add the lukewarm water until you get a soft dough that sticks slightly to the hand... because the corn flour will absorb the water and make the dough firm if it isn’t soft from the start.
- Cover the dough and let it rest for at least half an hour.
- Prepare the sauce.. In a pot over the heat, place the grated tomatoes, strained of their water, with a drizzle of olive oil, the very finely chopped onion, the crushed garlic, thyme, oregano, salt, and paprika, and let them simmer together until the sauce thickens.
- Roll out the pizza dough after it has risen in a tray greased with a little oil.
- Spread the Fontina cheese, cut into slices or grated, directly over the dough, then spread the sauce on top.
- Sprinkle the three grated cheeses mixed together (kashkaval, emmental, and mozzarella) over the sauce, then distribute the green pepper strips and sliced olives.
- Place the tray in a hot oven at 180°C and bake until browned.
- Add the basil leaves and brown the top slightly only.
- Note: Corn flour is healthy and will help the dough take on a beautiful golden color, as well as give it a crisp, biscuit-like texture.
