Maldoum (Kofta) Tray Bake with Vegetables
Maldoum (kofta) and vegetables baked in a tray — a rich, satisfying dish. You can add any vegetables you like. Serve with rice.

Ingredients
Start here, then move straight into the method.
- 1 kg lean ground meat
- 1 bunch parsley
- 2 onions
- Seven-spice mix
- Black pepper
- Ground cinnamon
- Salt
- Eggplant
- Zucchini
- Potatoes
- Tomato purée (passata)
- Tomato slices
- Green bell pepper rings
- 1/4 cup olive oil
Method
Follow the cooking sequence without leaving the page.
- Finely chop the parsley and onions and add them to the ground meat with salt and the spices; mix well.
- Shape the kofta into rounds or patties.
- Slice the vegetables into rounds as well. You can add any vegetables you like.
- Arrange the kofta patties and vegetable slices side by side in the baking tray. You can fry the vegetables first if you prefer.
- Pour the tomato purée over the tray, season with salt, a pinch of seven-spice and black pepper, and drizzle 1/4 cup olive oil over the top.
- Bake in a preheated oven at 200°C (about 390°F) for 1 hour, or until the vegetables are tender and the sauce has thickened.Timers: 60 min
- Serve the maldoum (kofta) and vegetables alongside rice.
