Ingredients

  • 4 cups flour
  • 2 tablespoons yeast
  • 1 tablespoon sugar
  • 1.5 teaspoons salt
  • 1/4 cup vegetable oil
  • 6 tablespoons milk powder
  • 1 1/4 cups warm water
  • Filling
  • 1.5 kilos spinach, washed, well drained, and chopped
  • 5 onions, finely chopped
  • 1 teaspoon sumac
  • 1 tablespoon salt
  • 1/2 teaspoon pomegranate molasses
  • A pinch of ground cinnamon
  • 1/4 cup olive oil
  • 1/4 cup lemon juice

Method

Follow the cooking sequence without leaving the page.

  1. Mix the dough ingredients except for the water.
  2. Add the water gradually and knead for at least 10 minutes.

  3. Let the dough rest in a warm place for at least 1 hour, until it rises and doubles in size.
    Timers: 60 min
  4. Prepare the filling by mixing all of its ingredients, then refrigerate for 1 hour while the dough rises.
  5. Drain any liquid from the dough before starting to fill the pies.
  6. Roll out the dough on a floured surface, cut into circles, place the filling in the centers, and fold into triangle-shaped pies.
  7. Place the pies on an oiled baking tray.
  8. Bake the spinach pies in a hot oven until browned on both sides.
