How to Make Easy Ajeh (Egg Fritters)
Ajeh, based on eggs and vegetables, is very nutritious and suitable for both children and adults. Add minced meat for a richer flavor, or omit it as desired. You can serve it for breakfast.
Ajeh... a delicious and easy dish that provides a feeling of fullness, in addition to being nutritious.
Ingredients
Start here, then move straight into the method.
- 5 eggs
- 2 cups chopped parsley
- 1 bunch mint, leaves picked and chopped
- 4 cups flour
- 4 cups water
- 2 stalks green onions, chopped
- 250 grams minced meat
- 5 small regular onions, diced
- Seven-spice blend
- A pinch of salt
- 1 teaspoon baking powder
Method
Follow the cooking sequence without leaving the page.
- Fry the finely chopped dried onion in a little oil until softened
- Add the minced meat and stir until it changes color and dries
- Sprinkle salt to taste and a pinch of seven-spice over the meat, stir, then remove from the heat
- In another bowl, mix the flour with water, then add the eggs and whisk
- Add the chopped parsley, mint, and green onion, a pinch of seven-spice, salt, and the meat filling, and mix well
- Add the baking powder immediately before frying and mix well
- Fry the ajeh in a little oil in a skillet. Take a small amount of the batter each time — about half a cup — to form patties
- Let them brown and cook through on both sides
