Ingredients

  • 1 large onion, dried
  • 1 potato, peeled and cut into four pieces
  • 2 cups pumpkin or squash, peeled and cut
  • 1 tablespoon butter
  • 2 cups chicken stock
  • salt to taste
  • white pepper to taste
  • cooking cream (optional)
  • chopped parsley for garnish
  • bread or toasted bread for serving

Method

  1. Sauté the sliced onion in a little butter until softened. Add the potatoes and stir, then add the pumpkin and cook for a short time...
  2. After a while, add the chicken broth and let the mixture simmer for 15 minutes. Add salt and white pepper and stir.
    Timers: 15 min
  3. Blend the mixture with an electric blender, then return it to the pot over heat. When it boils, add cooking cream if desired... let it simmer for a few minutes and then remove the soup from the heat.
  4. Garnish the pumpkin (or squash) soup with parsley and sprinkle a pinch of white pepper on top. Serve hot with bread or toasted slices.
