How to Make Miftaqa Dessert with Turmeric

How to make miftaqa dessert with turmeric, also known as 'uqdat safra,' one of the famous sweets in the city of Beirut with a very distinctive flavor. It takes time and effort to prepare, but the result is worth all the trouble! :)

Ingredients

Start here, then move straight into the method.

  • 3 cups Egyptian rice, soaked in water overnight
  • ‏‎ 4 cups sugar
  • 3 tablespoons turmeric, or uqdat safra
  • ‏‎400 g tahini
  • ‏‎1 liter water
  • ‏‎Pine nuts and dried rose petals for garnish - as desired
  • ‏‎

Method

Follow the cooking sequence without leaving the page.

  1. Wash the rice and leave it in water overnight. The next day, drain the rice well, then put it in a pot with the water and turmeric, stirring constantly until it comes to a boil.
  2. Cover the pot and leave it over very, very low heat for about half an hour. If available, the rice can be cooked in a pressure cooker to shorten the boiling time.
  3. After the time has passed, increase the heat under the pot while stirring continuously until the rice dissolves... or you can blend the rice in an electric mixer instead of stirring for a long time until it dissolves.
  4. Add the sugar and tahini gradually, continuing to stir.
  5. Add the pine nuts at this stage and keep stirring over low heat for about two hours.
  6. ...The important thing is not to stop stirring and not to turn off the heat until we see the tahini oil rise to the surface, meaning when the tahini oil separates from the mixture.
  7. You will see that the miftaqa has turned into one solid mass that does not stick to the sides of the pot, and the tahini oil coats it.
  8. Pour the miftaqa into dishes before it cools, and spread or smooth the surface well with a spoon. Leave it to cool, and at this stage you can decorate it with more pine nuts or dried rose petals, as desired.
