- 4 cups broad green lentils
- 8 cups water
- 5 dry onions
- 1 cup coarse bulgur
- Salt
- 1/4 cup vegetable oil
Method
- Warm the oil and add the chopped onion with a pinch of salt; sauté until browned over medium heat.
- Be careful not to burn the onion; keep stirring over medium heat to avoid bitterness.
- Rinse the lentils well and drain them.
- Add the water and lentils to the browned onion and bring to a boil over medium heat. Once the lentils boil, reduce heat and simmer until cooked but not mushy.
- Rinse the coarse bulgur and place it in a fine sieve.
- Add the bulgur to the lentils and return to medium heat; simmer for a while for flavors to blend, then reduce heat and simmer until cooked.
