Green Beans in Oil

Green beans in oil are a practical, tasty vegetarian dish, especially for families and kids. This traditional Levantine recipe is popular across the Levant.

Ingredients

Start here, then move straight into the method.

  • 1 kilogram green beans
  • 1 onion, large
  • 1 head of garlic
  • 5 large tomatoes, peeled and chopped
  • 1/4 cup vegetable oil
  • plus vegetable oil for frying the green beans
  • Salt and hot pepper to taste

Method

Follow the cooking sequence without leaving the page.

  1. Trim the ends of the green beans, wash them, and cut each bean into 2 or 3 pieces. Fry them briefly in oil, then place them on paper towels to absorb excess oil and set aside.
  2. Place the vegetable oil in a pot and sauté the chopped onion and garlic until they soften. Add the green beans, salt and tomatoes. You may replace some of the fresh tomatoes with a can of tomatoes plus 2 ripe tomatoes if desired.
  3. Stir the beans, tomatoes and onion well, then add enough water to cover all the ingredients.
  4. Cover the pot and cook over low heat for 30 minutes or until the green beans are tender and the sauce thickens.
