Bottle-roasted chicken — a very special recipe you shouldn’t miss.
Ingredients
- A whole chicken
- Aromatics: onion, fresh ginger, cinnamon sticks, and rosemary
- Marinade:
- 1 tablespoon tomato paste
- 1 tablespoon plain yogurt
- Paprika or sweet red pepper powder
- Chicken seasoning
- Ground cinnamon
- Ground ginger
- Salt
Method
- Mix the marinade ingredients and rub the chicken with it inside and out and under the skin.
- In a glass soda bottle or a small jar, put water with aromatics, then place the chicken over the jar or bottle so that the bottle is inside it.
- Stand the chicken upright on the bottle or jar in a baking tray and pour a little water into the tray.
- Place the tray on the oven rack at medium heat until the chicken is cooked.
- Add more water to the tray whenever the amount decreases.
- After the chicken cooks on the bottle by the steam rising from the water in the bottle and tray, remove it from the oven and serve.
