How to Make Mansaf with Lamb
Lamb mansaf is a practical, much-loved dish — an easy, tasty recipe suitable for feasts or everyday meals. Mansaf is delicious served with yogurt and salad.

Ingredients
Start here, then move straight into the method.
- 1 kg (or more) meat, cut into large or medium pieces
- 1 large onion
- 2 cinnamon sticks
- 4 garlic cloves
- 2 bay leaves
- a few sprigs of parsley
- 1 sprig rosemary
- 4 cardamom pods
- salt
- oil or ghee
- 1 tablespoon baharat (seven-spice) or to taste
- 2 cups mansaf rice
- toasted nuts (for garnish)

Method
Follow the cooking sequence without leaving the page.
- Put a little ghee or oil in the pot, add the pieces of meat and turn them for a few minutes to remove the raw pink color.
- Add hot water over the meat and leave to boil, then completely remove the scum that appears on the surface.
- Add the onion, the remaining seasonings, and salt, then cover and simmer on low heat until the meat pieces are tender... you can use a pressure cooker to speed up the process.
- After the meat is cooked, let it cool slightly and begin preparing the rice.
- Heat a little oil or ghee in a pot, add the washed and drained rice, and stir well.
- Add the seven-spice mix and continue stirring until the rice absorbs all the oil or ghee and is lightly toasted.
- Strain the meat broth from the seasonings and add 4 cups of the broth over the rice, adjusting the salt to taste.
- Leave the pot on high heat until the water boils, then reduce the heat and cover the pot.
- Leave it on low heat until the rice is cooked.
- Pour the rice into a wide serving dish, add the pieces of meat on top, and garnish with nuts.
