How to Make Eid Maamoul

It’s maamoul season! Here’s a new recipe for making authentic Eid maamoul... Prepare your Eid sweets and be proud of them! Enjoy, and happy holidays!

Ingredients

Start here, then move straight into the method.

  • 1/2 kilo fine semolina
  • 1/2 kilo coarse semolina
  • 1/2 kilo butter or a confectionery ghee
  • 1/3 cup powdered sugar or regular sugar
  • Pinch of salt
  • 1/2 teaspoon instant yeast
  • 1/3 cup rose water and orange blossom water
  • 1 teaspoon mahleb
  • Milk or water, as needed
  • 2 tablespoons powdered milk, optional
  • Date filling
  • Dates
  • Butter
  • Pinch of ground cardamom
  • Spice mix or ground maamoul spice
  • Pistachio filling
  • Ground pistachios
  • Rose water
  • Orange blossom water
  • Powdered sugar or syrup
  • Walnut filling
  • Walnuts
  • Powdered sugar
  • Pinch of mahleb
  • Pinch of cinnamon, optional

Method

Follow the cooking sequence without leaving the page.

  1. Melt the butter or ghee over low heat and let it cool completely. Put the fine and coarse semolina and the sugar in a bowl and mix. Add the butter or ghee and mix well.
  2. Let the mixture rest for 6 to 8 hours or overnight.
    Timers: 480 min
  3. After the resting time, dissolve the yeast with a spoon of warm water or milk and a pinch of salt and add them to the mixture; also add mahlab and orange blossom and rose water with a little water or milk. Knead well until you have a cohesive dough, then let it rest for one hour.
  4. Roll the dough into medium balls, make a cavity in each and fill with the filling of your choice.
  5. Bake the maamoul in the oven at medium heat until cooked and slightly browned. When ready, dust the hot maamoul with powdered sugar using a small sieve and leave the maamoul on the trays for 3 hours.

  6. When completely cool, wrap the Eid maamoul in special maamoul serving paper.
