How to Make Tomato Kammouneh
Tomato kammouneh is one of Lebanon's most delicious and well-known vegetarian dishes. You can prepare the kammouneh mixture in advance and freeze it without the vegetables, then use it when needed.

- 1 cup fine bulgur
- 2 tablespoons tomato paste
- 3 large tomatoes
- 3 tablespoons kammouneh*
- 1 dried white onion
- Mint
- 3 green onions
- Marjoram
- A pinch of ground cumin
- Hot pepper or chili, to taste
- Salt
- Olive oil
Method
- Wash the fine bulgur and rub it together with the tomato paste and the ripe tomatoes, finely chopped or blended in a food processor.
- Add the kammouneh mixture over the ingredients and knead well. Finely chop the onion, mint, green onions, and marjoram, then add them to the rest of the ingredients.
- Add a pinch of ground cumin, hot pepper, salt, and olive oil to taste.
