Rice Kibbeh Recipe

Ingredients

  • 1 cup Egyptian rice, soaked for 2 hours or more
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • egg
  • Filling
  • 1/2 kilo ground meat
  • 2 small onions
  • Pinch chopped parsley
  • Spices and salt to taste

Method

Follow the cooking sequence without leaving the page.

  1. Add 1 1/2 cups water to the drained rice and boil until the grains are cooked, ensuring the rice stays slightly moist. Remove from heat.
  2. Mash the rice, then add one egg and the spices and knead until a cohesive dough forms. Refrigerate for about 30 minutes to firm up.

  3. Meanwhile, prepare the filling. Sauté the onions in a little oil and then add the meat and spices. When the meat is cooked, sprinkle with parsley and stir and allow to cool.
  4. Shape the rice dough into medium balls. Create a hollow in each ball, fill it, and seal carefully to resemble meat Kibbeh. Refrigerate the rice kibbeh for about half an hour before frying.
  5. Fry the rice kibbeh in hot, deep oil over medium heat until crisp.
