Ingredients

  • One whole chicken, cut to your preference, or boneless chicken, cut into pieces.
  • 1/2 cup yogurt
  • 1/4 teaspoon dried coriander.
  • Turmeric or safflower (for color)
  • Black pepper
  • finely ground cinnamon
  • Salt
  • Curry powder
  • 2 onions, finely chopped.
  • Garlic, crushed
  • 3 tomatoes, chopped
  • Green cardamom pods
  • Cinnamon sticks
  • Bay leaf
  • 3 chicken bouillon cubes
  • Mushrooms, sliced as desired.
  • 2 cups rice, washed and soaked in hot water for a quarter of an hour; fried nuts for garnish.

Method

  1. Cut the chicken, wash it, and season it with yogurt and spices for one hour.
  2. Fry the onion in corn oil until softened, then add the garlic and mushrooms, then the tomatoes, cardamom, cinnamon, bay leaves, and one chicken stock cube.
  3. After that, add the yogurt and chicken mixture and leave the ingredients over low heat until the chicken is cooked and browned, stirring from time to time ... Be sure to stir correctly; stir the chicken with a spoon in a circular motion from the edge of the pot.
  4. Cook the rice with two chicken stock cubes
  5. Put 3 cups of boiling water in a pot and add corn oil and two chicken stock cubes, paying attention to the amount of salt.
  6. Drain the soaked rice and add it to the pot. Leave it over high heat until the water dries up .... reduce the heat and place the towel we set aside for the rice under the lid and leave it to steam for about 20 minutes or until the rice is cooked.

  7. Put 3 cups of boiling water into a pot, add corn oil and 2 chicken bouillon cubes, and be mindful of the amount of salt. Drain the soaked rice and add it to the pot. Leave it on high heat until the water has evaporated, then reduce the heat, place the towel you set aside for the rice under the lid, and let the rice steam for 20 minutes approximately or until the rice is cooked.
