Freekeh with beef is as hearty as mansaf on your table. Elevate your Ramadan spread with this delicious, nourishing freekeh—here's a simple, tested recipe.

Ingredients

  • 1 kilogram beef chunks
  • bone-in beef or lamb ribs, as preferred
  • 3 cups freekeh, soaked and rinsed
  • 1 dried onion
  • 1 teaspoon seven-spice
  • 1/2 teaspoon black pepper
  • Vegetable oil
  • Salt

Method

  1. Boil the pieces of beef with aromatics—bay leaves, cinnamon sticks, cardamom pods, nutmeg, and any other spices available or desired—to obtain a rich broth.
  2. Finely chop the onion and sauté it in a little oil until softened, then add the freekeh, the spices, and salt and stir until the freekeh grains are coated with oil.
  3. Add the boiled beef broth to cover the freekeh and rise about 1 cm above it. When the broth comes to a boil, leave the pot on low heat.
  4. Pour the freekeh into a serving dish and arrange the pieces of beef on top; you can garnish with nuts.
  5. Serve the freekeh with beef alongside green salad and plain yogurt.
