- 1 kilogram beef chunks
- bone-in beef or lamb ribs, as preferred
- 3 cups freekeh, soaked and rinsed
- 1 dried onion
- 1 teaspoon seven-spice
- 1/2 teaspoon black pepper
- Vegetable oil
- Salt
Method
Follow the cooking sequence without leaving the page.
- Boil the pieces of beef with aromatics—bay leaves, cinnamon sticks, cardamom pods, nutmeg, and any other spices available or desired—to obtain a rich broth.
- Finely chop the onion and sauté it in a little oil until softened, then add the freekeh, the spices, and salt and stir until the freekeh grains are coated with oil.
- Add the boiled beef broth to cover the freekeh and rise about 1 cm above it. When the broth comes to a boil, leave the pot on low heat.
- Pour the freekeh into a serving dish and arrange the pieces of beef on top; you can garnish with nuts.
- Serve the freekeh with beef alongside green salad and plain yogurt.
