How to Prepare Roasted Chicken

- 1 whole chicken, large size
- Marinade
- Seven-spice, black pepper, saffron, turmeric, cinnamon, 2 tablespoons yogurt, vegetable oil, salt, magic spice blend, vinegar, mustard, red chicken seasoning
Method

- Clean the chicken and soak it in water with vinegar and flour, then wash it, rub it with lemon, and wash it again.
- Mix all the marinade ingredients and rub the chicken inside and out; place bay leaves, cinnamon, cardamom pods, and an onion studded with cloves inside the cavity, and keep the chicken in the marinade overnight in the refrigerator.
- On the second day preheat the oven, put the chicken in the roasting pan, add a little water with the remaining marinade to the pan, cover with aluminum foil, and leave it in the oven for about two hours on low heat.
- After it is cooked, remove the aluminum foil and brown the top of the chicken.
