Ingredients

  • 1 large eggplant
  • 1 potato
  • 1 colorful bell pepper, as available
  • Tomato
  • Kashkaval, Halloumi, or Mozzarella cheese, as available

Method

  1. Boil the eggplant and potatoes for only 10 minutes... Slice the eggplant and potatoes in strips without cutting through the whole vegetable, as shown in the accompanying photo...

  2. Cut the tops off the peppers and clean them from the inside..
  3. Brush the eggplant and potatoes with butter and season with salt, black pepper, oregano or wild thyme. Arrange them in an ovenproof glass dish with the colored peppers and place slices of tomato and Kashkaval, halloumi, or mozzarella cheese inside...
  4. Add on top a mixture made of tomato with oregano, oil, salt, black pepper... Blend them in a blender and pour over the glass dish, then bake the eggplant with the vegetables in the oven until cooked...
  5. Serve the cooked eggplant with vegetables alongside cooked white rice...
  6. Note: minced meat can be added if desired
