Homemade Beef Shawarma

Delicious homemade beef shawarma — an authentic, carefully made recipe. Homemade shawarma is lighter since it doesn’t contain much fat. This recipe includes tips to make it extra tasty — don’t forget the parsley salad and tahini (tartar) sauce.

Homemade beef shawarma — tastier, cleaner, and lighter at home

Ingredients

Start here, then move straight into the method.

  • 1 kg beef fillet or tender chuck steak — any beef cut sliced thin suitable for shawarma
  • 100 g fat, sliced
  • red tomatoes
  • Marinade
  • 2 tbsp white vinegar
  • salt to taste
  • 1 tbsp beef shawarma spice mix
  • Parsley salad (or biwaz)
  • parsley
  • onion wedges
  • salt
  • sumac
  • Tartar / Tahini sauce
  • tahini
  • water
  • lemon juice

Method

Follow the cooking sequence without leaving the page.

  1. Put the meat in the refrigerator overnight... Do not season it with anything.. This step is important to make slicing into strips easier
  2. The next day, cut it and marinate it for at least 6 hours
    Timers: 360 min
  3. Grind the fat in the meat grinder until smooth
  4. Put it in a pan over low heat until it melts
  5. Preheat the oven to 180°C and place the beef shawarma tray on the middle rack and leave it for 15 minutes... then add the melted fat on top and stir well so the meat and fat mix

  6. Pierce the red tomatoes all over and place them in the tray... this will give us a tasty broth for the shawarma
  7. Leave the beef shawarma tray for an additional 15 minutes.
    Timers: 15 min
  8. Prepare the tarator (tahini) sauce.. whisk all the ingredients together, preferably whisk the water and tahini first before adding the lemon juice so the tahini does not clump
  9. Prepare the parsley salad.. chop the parsley finely and cut the onion into wedges.. mix and season with salt and sumac
  10. Serve the beef shawarma with parsley salad or onion salad and tarator
