Salmon with cream and spinach! A fresh, inventive way to prepare and serve salmon!

Ingredients

  • 4 cloves garlic, crushed
  • 2 tablespoons Dijon mustard
  • 1 teaspoon turmeric or a small pinch of saffron
  • 1 teaspoon dried coriander
  • A pinch of black pepper
  • A pinch of white pepper
  • A pinch of rosemary
  • 1 tablespoon olive oil
  • Squeeze the lemon juice and pour it over the salmon
  • Sauce to accompany the salmon:
  • 4 cloves garlic, crushed
  • 1 cup spinach
  • 1/2 cup sliced mushrooms
  • 2 tablespoons olive oil or butter
  • Parmesan cheese to taste
  • 1 cup cooking cream
  • 1 tablespoon flour
  • Sprinkle black pepper, salt, and Parmesan cheese to taste

Method

  1. Mix the marinade ingredients and spread them over the salmon.
  2. Cook the seasoned salmon over direct heat (top broil) or place it in the oven to roast for about 15 minutes—no more, to avoid drying the fish.

  3. Squeeze the juice of a lemon over the salmon.
  4. Place the crushed garlic and 2 tablespoons of olive oil in a large skillet over medium heat.
  5. When the garlic softens, add the mushrooms and sauté well.
  6. Add the spinach and continue to cook, then stir in the tablespoon of flour and keep stirring.
  7. Finally add the cup of cooking cream and cook until the sauce thickens.
  8. Season with salt, black pepper and sprinkle Parmesan to taste.
  9. Place the salmon in the sauce and simmer together for about 5 minutes only.
