Chicken and Shrimp Paella

Chicken paella with shrimp isn’t the easiest recipe; it requires time and effort, but it is incredibly delicious and sure to win over your family and guests.

Ingredients

Start here, then move straight into the method.

  • 1 kilo chicken with bones
  • 1 head garlic
  • 1 tablespoon onion powder
  • 1 tablespoon ginger
  • 1 tablespoon curry powder
  • lemon zest
  • 2 tablespoons tomato sauce (tomato)
  • rosemary
  • water
  • 1 kilo shrimp, tails removed
  • 4 onions, peeled and chopped
  • mixed-color bell peppers
  • grated carrot
  • 1 chicken stock cube
  • 5 tomatoes
  • mixed spices: kabsa spice, curry, and saffron
  • 2 cups rice
  • Garlic and onion powder and grated ginger and 1 tablespoon curry and lemon zest with its juice and 2 tablespoons tomato sauce and rosemary and 1 and a half cups of water... we put the mixture over the chicken and put it in the oven..

Method

Follow the cooking sequence without leaving the page.

  1. We cut the chicken and rub it with salt, lemon, and cinnamon and put it in a pot with lemon pieces and bay leaves. We cover the pot and leave it on low heat without adding water...
  2. We also boil the shrimp or prawns separately with aromatics, drain them, and fry them with two tablespoons of the chicken mixture..
  3. We fry two finely chopped onions and mixed bell pepper, grated carrot, lemon zest, black pepper, a chicken stock cube, kabsa spice, 1 tablespoon curry, and saffron infused in hot water... We add all of the above over the rice with shrimp stock or chicken stock or water depending on the amount of rice
  4. We garnish the rice to taste...
  5. We fry two onions with a clove of garlic and five tomatoes with chili to taste, a stock cube, black pepper, and 1 cup of water... We boil them for about 10 minutes and then blend them in the electric blender...
