Falafel... with a special mix of potato for crispness and tomato for tenderness on the inside. We recommend that you try it.

Ingredients:

Cracked fava beans

Chickpeas

Parsley

Onion

Garlic

1 potato

Falafel spices

Salt

1 teaspoon baking soda

1 teaspoon baking powder

Vegetables, pickles, and tahini/ tarator sauce for serving

Method

  1. Soak equal quantities of split fava beans and chickpeas together... soak them overnight... and without baking soda
  2. The next day... grind them in the machine for grinding falafel and add onion, garlic, tomato, potato, and parsley, plus salt and falafel spice
  3. After mixing well until you get a smooth, homogeneous dough... and just before frying, add baking soda and baking powder and mix again
  4. Shape them into patties by hand or with the special falafel-shaping tool
  5. Fry them immediately in plenty of hot oil
  6. In Arabic bread... place a few falafel patties with tartar sauce and mixed vegetables... and roll them into a sandwich
