Yellow rice with taouk in a recipe that's simply unbeatable... Who else loves chicken breast because it cooks quickly and, of course, tastes delicious? This recipe is very special and practical, especially if you have an occasion and want to make a great impression on your guests. Give it a try.

Ingredients

Start here, then move straight into the method.

  • Chicken breast, cut into cubes - 1.5 kg or as needed for the amount of rice
  • Chicken marinade
  • Crushed garlic 10 cloves
  • Olive oil 2 tablespoons
  • Vinegar 2 tablespoons
  • Yogurt 4 tablespoons
  • Paprika 1 teaspoon
  • Hot pepper powder (optional) - to taste
  • Black pepper 1/2 teaspoon
  • Salt to taste
  • Mustard 2 tablespoons
  • Oregano (dried wild thyme) a pinch
  • Ketchup 2 tablespoons
  • Rice
  • 2 cups long-grain rice
  • 4 cups water
  • 2 cardamom pods
  • 2 cinnamon sticks
  • Cumin seeds 1 teaspoon
  • Black peppercorns 1/2 teaspoon
  • 2 bay leaves
  • Cloves 1/4 teaspoon
  • 1 dried lemon or loomi (make a few cuts in the lemon with a knife so its flavor becomes stronger during cooking)
  • Yellow food coloring mixed with a little water - a few drops
  • Orange food coloring mixed with a little water - a few drops

Method

Follow the cooking sequence without leaving the page.

  1. We start by making the marinade for the chicken... In a bowl, mix all the marinade ingredients, add the chicken, and stir until the pieces are completely coated.
  2. Let the chicken marinate for at least two hours, and preferably overnight in the refrigerator.
  3. Thread the taouk pieces onto wooden skewers and grill them in an oiled baking tray in a well-heated oven.
  4. Turn the skewers from time to time until they are fully cooked on all sides, without overgrilling the taouk so it doesn't dry out.
  5. At the same time, in a pot over high heat, add the water (2 cups for each cup of rice) with the cardamom, cinnamon, cumin seeds, paprika, black pepper, salt, bay leaves, cloves, and dried lemon.
  6. When the water comes to a strong boil, add the rice and let it boil over high heat until the bubbles are clearly visible and the water level reaches the rice.
  7. Drizzle the yellow food coloring mixture (a few drops mixed with a very small amount of water) as well as the orange food coloring mixture over the rice before covering the pot immediately.
  8. Cover the pot and leave it over very low heat until the rice finishes cooking... Do not stir the rice at this stage so you get rice in the two colors mentioned without them mixing together.
  9. Once cooked, transfer the rice to a serving platter and arrange the taouk on top.
