Ingredients
Start here, then move straight into the method.
- meat pieces or shanks
- spices for boiling the meat: bay leaves, cinnamon sticks, cardamom pods, and whole cloves
- whole chickpeas
- small dry onions
- coarse bulgur
- ground cinnamon
- black pepper
- seven-spice mix
- salt to taste

Method
Follow the cooking sequence without leaving the page.
- Boil the meat pieces or shanks with the aromatics
- In another pot, cook the chickpeas that were soaked overnight
- Cook the small onions in a third pot
- When the meat, chickpeas, and onions are cooked, put them together in one pot and add some broth from each
- When the broth boils, add the bulgur and spices, stir, and leave them on low heat until the bulgur is cooked
