Ingredients

  • 2 1/2 cups ghee or butter
  • 8 cups all-purpose flour
  • 2 cups powdered sugar
  • Vanilla
  • Date filling and orange blossom water
  • Pistachios for garnish

Method

  1. Cream the sugar and ghee well until you get a pale, white mixture. Add the flour and vanilla and continue kneading until you have a soft, homogeneous dough.
  2. Let the dough rest in the refrigerator for about 15 minutes.
    Timers: 15 min
  3. Remove the dough from the fridge and shape it into rounds, then flatten and fill them with dates. Top with pistachios as shown in the accompanying photos.
  4. Place the date-filled ghraibah fingers on a baking sheet lined with parchment paper. Bake in a preheated oven at 120°C for a maximum of 10 minutes.

  5. We do not want the date-filled ghraibah fingers to brown; we want to preserve their beautiful white color...
