Easy Abbas Kaak Recipe

Kaak al-Abbas is a very delicious, much-loved traditional recipe that is always requested for happy occasions as well as times of mourning. Here is this tried-and-tested homemade recipe for Kaak al-Abbas, also known as Kaak al-Khamis or al-Marqad.

Ingredients

Start here, then move straight into the method.

  • 1 kilo flour (about 4 and a half cups)
  • Half a pack butter, melted and cooled, approximately 100 grams
  • 2 cups sugar
  • 1 cup 'farikha' flour, i.e., fine semolina
  • 1 cup vegetable oil
  • 1 cup powdered milk
  • 1 tablespoon yellow 'aqda' (traditional spice blend)
  • 1 tablespoon cake spice mix (dakka), i.e., kaak spice blend
  • 1 tablespoon ground anise; whole anise seeds can be added if desired
  • 1 teaspoon ground mahaleb
  • 1 tablespoon yeast
  • 1 teaspoon baking powder
  • lukewarm water for kneading
  • white sesame for topping the kaak, as desired

Method

Follow the cooking sequence without leaving the page.

  1. Knead all the ingredients well and set the dough aside to rise for at least two hours....
  2. After the dough has risen, divide it into balls and press each ball into a kaak stamp or mold, pressing gently until the ball takes the shape of the mold.
  3. Then arrange the kaak on a baking tray and place it in a preheated oven at 180 degrees on the middle rack. Bake until lightly golden, then remove and set aside to cool.
