Ingredients:

1 kilo flour, about 4 1/2 cups

Half a stick of butter, melted and cooled, about 100 g

2 cups sugar

1 cup chickpea flour, i.e. fine semolina

1 cup vegetable oil

1 cup milk powder

1 tablespoon yellow mahlab

1 tablespoon kaak spice, or a kaak seasoning blend

1 tablespoon ground anise, and whole anise seeds can also be added

1 teaspoon mahlab

1 tablespoon yeast

1 teaspoon baking powder

Lukewarm water for kneading

White sesame seeds for the top of the kaak, as desired

Preparation:

Knead all the ingredients well and set the dough aside to rise for at least two hours....

After the dough has risen, divide it into balls and press each ball into a kaak stamp or mold, pressing gently until the ball takes the shape of the mold.

Then arrange the kaak on a baking tray and place it in a preheated oven at 180 degrees on the middle rack. Bake until lightly golden, then remove and set aside to cool.
