- 1 cup coarse semolina
- 1/4 cup sugar or more to taste
- 1 1/4 cups milk
- 1/4 cup butter
- 1 cup shelled pistachios
- 1 tablespoon rose water
- 1 tablespoon orange blossom water
- To serve:
- Fresh clotted cream (ready-made)
- Nuts as desired
- Sugar syrup or shireh
Method
- Put the semolina and butter in a pot over the heat and stir until it takes a light golden color.
- Add the sugar to the semolina, then gradually add the milk until the semolina absorbs the liquids well. Also add the rose water and orange blossom water.
- The mixture will turn into a dough-like consistency. You can add more milk or water if the mixture remains too thick.
- Add the pistachios to the dough and mix well. Remove the pot from the heat and let the madlouka cool.
- Spread the madlouka in a serving dish. Distribute the fresh clotted cream over it and garnish with nuts.
- Serve the sugar syrup or shireh alongside the madlouka.
