Ingredients
- 1 kilogram flour
- 1 teaspoon salt
- 1/2 kilogram fresh green thyme, stems removed, washed and very well squeezed of water
- 2 and 1/2 cups lukewarm water
- 1 medium tablespoon sugar
- 2 tablespoons yeast
- 3 tablespoons powdered milk
- 1 cup olive oil
- White cheese or other cheese as desired for filling
- Sesame for garnish

Method
- In a bowl, put half of the flour with the salt, sugar, yeast, powdered milk, and the chopped za'atar and mix... you can also use whole za'atar leaves without chopping....
- Add only half the oil and mix.. then start adding the lukewarm water in batches and knead
- Add the remaining flour in batches as well, continuing to add flour and water and knead until we obtain a cohesive dough
- Add the remaining oil and knead until the dough absorbs the oil well
- Cover the dough with plastic wrap and a cotton kitchen towel and leave it aside in a warm place to rise
- When it has risen, shape the dough into medium-sized balls and let them rest a little
- Flatten each ball with the palm of your hand, fill it with cheese, then close it to form balls and garnish with sesame
- Arrange the dough balls in a greased baking tray and put them into a hot oven until they cook, then brown the tops
