Ingredients
- 6 cups sifted flour
- 1 teaspoon ground mahlab
- 2 cups sugar
- 2 teaspoons baking powder
- 1 tablespoon baking soda
- 3 cups yogurt
- 300 g ghee or butter, at room temperature, unsalted
Method
- First, put the baking soda in 1 cup of the yogurt and stir, then leave it for a few minutes to react.
- After sifting the flour, add the sugar, baking powder, and mahlab, and mix well.
- Add the yogurt mixed with the baking soda to the flour mixture and begin kneading.
- Add the butter and gradually add the remaining yogurt, kneading until you get a firm, non-sticky dough...... you should knead for 10 minutesTimers: 10 min
- Let the yogurt dough rest for 30 minutesTimers: 30 min
- After the time has passed.... shape the kaak by hand and place it on a baking tray lined with parchment paper or lightly greased with oil
- Bake the yogurt kaak on the oven rack, not on the oven floor, at 180°C for only 12 minutes from the bottom, then brown it for one minute from the top... do not overbake the kaak so it does not become hardTimers: 12 min
