Ingredients

  • 2 cups American rice
  • 4 cups broth or chicken cooking liquid
  • 1 kilo chicken breast
  • Seasonings for boiling the chicken / bay leaves and cinnamon sticks
  • 1 cup canned corn
  • 4 chicken bouillon cubes
  • 3 tablespoons oil
  • 1 teaspoon black pepper
  • 1 teaspoon turmeric or duga safra
  • Salt to taste
  • Nuts to taste

Method

  1. Wash the chicken thoroughly with water, salt, and vinegar, and drain it.
  2. Sprinkle a little salt on it, then sauté it in a little oil until it browns slightly.
  3. Put the chicken in a pot on the stove with aromatics and water and let it boil until it is well cooked.
  4. Wash the rice then soak it in water with a tablespoon of salt for 15 minutes.
  5. Put a little oil in a pot and add chicken stock cubes, drain the rice and add it with the spices and salt and stir.
  6. Add four cups of the chicken cooking stock and stir.
  7. Leave the rice over high heat until the stock boils, then reduce the heat.
  8. Shortly before the rice is done, add the corn and stir, then cover the pot again and leave it over low heat until the rice is well cooked.
  9. Turn off the heat and leave the pot covered so the rice rests for a few minutes.
  10. Pour the yellow rice into a serving dish, arrange the boiled chicken pieces on top, and garnish with fried or toasted almonds and pine nuts.
