Cauliflower maqluba... an excellent vegetarian recipe
Ingredients
- Cauliflower
- Rice (any type you prefer) — 2 cups
- 1 large onion
- Salt
- Cinnamon
- Baharat (seven-spice blend)
- Oil for frying the cauliflower
Method
- Cut the cauliflower into medium florets and fry them in oil; set aside to drain.
- Rinse the rice and set it aside to drain as well.
- Slice the onion into large wedges and place it in a pot with a tablespoon of oil; sauté until slightly softened.
- Add the rice on top of the onion, sprinkle with salt and a pinch of cinnamon and baharat, and stir.
- Add water at a ratio of 2 cups water for each cup of rice and stir lightly. Add half of the fried cauliflower as well.
- When the water comes to a boil, reduce the heat, cover the pot, and let the maqluba cook.
- To serve, arrange the remaining cauliflower on top.
