Lentil kibbeh... a vegetarian recipe that is inexpensive and tastes amazing. You must try it
Ingredients
- 1 cup yellow cracked lentils
- 1 cup fine bulgur
- 2 large onions
- 1 cup olive oil
- 1 tablespoon sweet pepper paste
- 1 tablespoon tomato paste
- A pinch of salt
- A pinch of cumin
Method
- Boil the lentils until fully cooked, leaving just a very small amount of water in the pot.
- Add the bulgur to the lentils, stir, and turn off the heat.
- Leave the bulgur grains to puff up.
- Meanwhile, finely chop the onions and sauté them in the olive oil over the heat until lightly golden.
- Add the tomato paste and sweet pepper paste to the onions, stir briefly, then turn off the heat.
- Add this sautéed mixture to the lentils and bulgur in the pot, along with the salt and cumin, and stir.
- Let them sit for a short while until they are warm, then begin kneading them together.
- Shape the lentil kibbeh as desired, or spread it in a serving dish.
