Turkish-style vegetarian kibbeh is very special and delicious. It looks like traditional kibbeh, but it is completely meat-free. Try it and you’ll definitely love it.

Ingredients

  • 500 g fine semolina or fine bulgur
  • medium potato, boiled and mashed
  • finely ground walnuts, about the same texture as the bulgur
  • 1 large onion, grated
  • 2 cloves garlic, crushed
  • 1 tbsp tomato paste
  • 1 tbsp sweet pepper paste
  • 5 tbsp hot black pepper
  • 1/2 cup olive oil and 1/2 cup vegetable oil
  • 1/2 cup pomegranate molasses
  • 1 tomato, mashed
  • 1 tsp ground cumin
  • To prepare the sauce served with Turkish kibbeh:

Method

  1. Soak the bulgur in 1 cup of water for 20 minutes. Then mix all the other ingredients except the oils and pomegranate molasses, add them to the bulgur, and knead well.

  2. Add the olive oil, vegetable oil, and pomegranate molasses, then knead again for 15 minutes.
    Timers: 15 min
  3. Finally, mix together 1 cup each of fresh mint, green onion, and chopped parsley.
  4. Mix lemon juice with pomegranate molasses, a little vegetable oil, and a little ketchup.
  5. When serving, add lemon juice and fresh vegetables.
