Ingredients
- 500 g fine semolina or fine bulgur
- medium potato, boiled and mashed
- finely ground walnuts, about the same texture as the bulgur
- 1 large onion, grated
- 2 cloves garlic, crushed
- 1 tbsp tomato paste
- 1 tbsp sweet pepper paste
- 5 tbsp hot black pepper
- 1/2 cup olive oil and 1/2 cup vegetable oil
- 1/2 cup pomegranate molasses
- 1 tomato, mashed
- 1 tsp ground cumin
- To prepare the sauce served with Turkish kibbeh:
Method
- Soak the bulgur in 1 cup of water for 20 minutes. Then mix all the other ingredients except the oils and pomegranate molasses, add them to the bulgur, and knead well.Timers: 20 min
- Add the olive oil, vegetable oil, and pomegranate molasses, then knead again for 15 minutes.Timers: 15 min
- Finally, mix together 1 cup each of fresh mint, green onion, and chopped parsley.
- Mix lemon juice with pomegranate molasses, a little vegetable oil, and a little ketchup.
- When serving, add lemon juice and fresh vegetables.
