Method
- Place the yeast and sugar in the milk and leave for ten minutes until the yeast becomes active
- Add the remaining ingredients and knead well until the dough comes together. Let it rest for one hour
- Divide the dough into balls. Roll them out and fill them with different fillings as desired. Seal the dough over the filling and shape as you like
- Brown the dough in a hot pan without oil, flipping to brown on both sides
- Add 1 small teaspoon paprika and 1 small teaspoon turmeric, plus 1 small teaspoon tomato paste or sweet pepper paste. Add a little chopped parsley, salt, and black pepper to taste
- Stir the meat filling briefly, remove from the heat before it dries out or the meat loses its juiciness. Wait until it cools before filling the dough with it
- Mix grated feta, mozzarella, and akawi cheese. Add a little chopped parsley and some nigella seeds (black seed)
