Wild Thyme and Olive Bread

Homemade thyme and olive bread with a simple, tested method. You’ll love this recipe because all ingredients are readily available and it doesn’t require a tricky filling or long prep time—just let it rest a bit before baking.

Ingredients

  • 1 cup pitted green olives
  • a bunch of wild thyme
  • 500g flour
  • 1/2 teaspoon sugar
  • a pinch of salt
  • 3/4 cup olive oil
  • 1 teaspoon yeast
  • 1/4 teaspoon baking powder
  • 3/4 cup water

Method

Follow the cooking sequence without leaving the page.

  1. Mix the dry ingredients together
  2. Then add the oil to the flour
  3. Work them together until they blend with the flour, about 5 minutes

  4. Then add thyme and olives to the dry ingredients until they coat well, then gradually add warm water until a soft dough forms; knead for about 5 minutes and shape to your liking with a thickness of about 1 cm...
  5. Place the thyme bread on baking sheets without greasing the sheet; the oil in the dough will prevent sticking and the sugar in it will caramelize to give a beautiful color.
  6. Cover the sheet well with a kitchen towel and keep it from air; let it rise for about 3 hours...

  7. After that, bake in the oven and bake from the top and bottom in a hot oven at 180°C until the bread is cooked and browned..
