Three Breads from One Dough

Homemade bread is irresistible. This single dough can be shaped to make French rolls, toast loaf, or hamburger buns—only the shaping differs.

Ingredients

Start here, then move straight into the method.

  • 5 cups all-purpose flour
  • 2 cups lukewarm water
  • 2 tablespoons instant yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt, or to taste
  • About 1/3 cup oil (3–4 tablespoons)
  • Sesame seeds
  • Milk to brush the tops of the loaves

Method

Follow the cooking sequence without leaving the page.

  1. Stage one: Use 2 cups flour with the sugar, yeast, salt, oil, and 2 cups lukewarm water and mix until you have a runny batter.
  2. Let it proof for 10 minutes in a warm place.

  3. Stage two: Add the remaining 3 cups of flour and salt and knead until you have a soft, smooth dough.
  4. Let it rest for 10 minutes, then divide it into multiple pieces. For French rolls or fingers, cut into medium rounds, roll them out with a rolling pin using a little flour as usual, then roll into a log and seal the ends well, or cut with a knife to make long fingers.

  5. Place them on a baking tray and let them rest for about 1 hour before baking.

  6. For hamburger buns: cut or shape the dough into somewhat large rounds and place them on the tray to proof for 1 hour.
  7. For toast: shape the dough into one large piece, roll it out on a clean surface, then roll it lengthwise into a cylinder and place it in a loaf pan; let it proof for 1 hour as well.
  8. Preheat the oven to 240°C. Brush the tops with milk and sprinkle with sesame seeds.
  9. Bake on the middle rack for only 10 minutes, then brown the tops slightly.

  10. Remove the bread from the oven and cover with a damp cloth for 15 minutes to obtain soft bread.
