How to Make Hendbeh

- 1 bunch of wild chicory or fresh green hendbeh
- 2 large dry onions
- Oil
- Salt to taste
Method
- Chop the hendbeh coarsely, removing the stems because they are bitter. Wash it well, immerse it in water and boil it for about 5 minutes until it becomes tender.Timers: 5 min
- Remove it from the boiling water and leave it to cool. Once cooled, squeeze it well with your hands and set it aside.
- Fry the onion slices in vegetable oil until golden. Drain the onion and use the same oil to fry the hendbeh over low heat until it is cooked.
- Sprinkle salt over the hendbeh, stir, and remove it from the heat.
- Place the hendbeh on a plate and garnish it with the fried onion. When serving, squeeze lemon over it and eat it with Arabic bread.
