Tabaqah rice with meat is one of those dishes that always stands out at celebrations and family gatherings because it feels so special and generous. It is a delicious recipe, especially served with dakkous sauce or yogurt.

Ingredients

  • 1 cup basmati rice
  • 1 finely chopped onion
  • 200 g ground meat
  • 3 teaspoons seven-spice blend
  • A pinch of salt
  • 1 chicken bouillon cube
  • A pinch of black pepper

Method

  1. Soak the rice in boiling water for 1 hour.
    Timers: 60 min
  2. In a pot over the heat, add a little vegetable oil and let it heat, then cook the finely chopped onion in the oil until softened.
  3. Add the ground meat and stir until cooked through.
  4. Drain the rice and add it to the sautéed mixture, then stir.
  5. Boil the water you will use for cooking the rice separately, at a ratio of 2 cups of water for every 1 cup of rice. Boil it with the spices, salt, and bouillon cube until the cube dissolves.
  6. Pour this seasoned, spiced water over the rice in the first pot, making sure the water just covers the rice.
  7. Let everything come to a boil together, then reduce the heat immediately after boiling, cover the pot, and leave it over low heat until the tabaqah is cooked.
  8. Serve the tabaqah rice on a serving platter and top it with grilled or boiled chicken, or boiled meat pieces, then garnish with fried nuts.
