Ingredients

  • 4 cups all-purpose flour
  • 1 tsp baking powder
  • A pinch of bicarbonate of soda
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 tsp salt
  • Water, as needed for the dough
  • Spinach filling
  • 2 bunches spinach
  • 2 onions
  • 1 tbsp sumac
  • 1 tbsp pomegranate molasses
  • Juice of a lemon
  • Olive oil
  • Feta cheese
  • Note
  • Do not add salt to the spinach filling because the feta cheese is salty.

Method

Follow the cooking sequence without leaving the page.

  1. Prepare a large bowl and add the sifted flour and salt, then add the oil and rub in with your fingertips until a homogeneous dough forms…
  2. Begin adding the water, egg, and sugar gradually while continuing to knead until you have a cohesive dough that does not stick to your fingertips or the bowl.
  3. Cover the dough and let it rest at room temperature for one hour.
  4. After the required time, divide the dough into 10 pieces (or more, if desired).
  5. Shape the dough pieces into rounds, cover them again, and let them rest for 10 minutes.

  6. Dust cornstarch onto a completely clean, dry surface, then take each dough piece and roll it out with a rolling pin, sprinkling the dough continuously until it becomes very thin…
  7. Take a sheet of dough, fold it in half, spread the spinach-and-cheese borek filling along the length of the dough, and roll it lengthwise.
  8. Roll the long, rope-like strip inward to form a large coiled circle.
  9. Repeat this process until you have a spiral shape resembling the photo accompanying the recipe.
  10. Brush the dough with butter or oil, sprinkle sesame over it, and bake in a preheated oven for 15 minutes.
