Spinach Borek in a Baking Dish

Ingredients

- 4 cups all-purpose flour
- 1 tsp baking powder
- A pinch of bicarbonate of soda
- 1 egg
- 1/4 cup vegetable oil
- 1 tsp salt
- Water, as needed for the dough
- Spinach filling
- 2 bunches spinach
- 2 onions
- 1 tbsp sumac
- 1 tbsp pomegranate molasses
- Juice of a lemon
- Olive oil
- Feta cheese
- Note
- Do not add salt to the spinach filling because the feta cheese is salty.

Method

- Prepare a large bowl and add the sifted flour and salt, then add the oil and rub in with your fingertips until a homogeneous dough forms…
- Begin adding the water, egg, and sugar gradually while continuing to knead until you have a cohesive dough that does not stick to your fingertips or the bowl.
- Cover the dough and let it rest at room temperature for one hour.
- After the required time, divide the dough into 10 pieces (or more, if desired).
- Shape the dough pieces into rounds, cover them again, and let them rest for 10 minutes.Timers: 10 min
- Dust cornstarch onto a completely clean, dry surface, then take each dough piece and roll it out with a rolling pin, sprinkling the dough continuously until it becomes very thin…
- Take a sheet of dough, fold it in half, spread the spinach-and-cheese borek filling along the length of the dough, and roll it lengthwise.
- Roll the long, rope-like strip inward to form a large coiled circle.
- Repeat this process until you have a spiral shape resembling the photo accompanying the recipe.
