  • 2 cups Egyptian rice
  • 4 cups water for cooking the rice
  • 1 cup sugar, or to taste
  • 1 tablespoon ground mastic
  • 2 cups mozzarella cheese
  • 2 tablespoons powdered milk
  • 1 tablespoon rose water
  • 1 tablespoon orange blossom water
  • Pistachios for garnish

Method

  1. We wash the rice well and leave it soaked in water for one hour.
  2. After the required soaking time, we put the rice in a pot over the heat until it cooks and absorbs all the liquids. Then we turn off the heat and grind the rice well until it becomes smooth like a paste.
  3. On low heat we put the rice with sugar to taste and add ground mastic and mozzarella or akawi cheese depending on what you have...
  4. (We add powdered milk at this stage if available, as desired...)
  5. When the cheese melts we add a tablespoon of orange blossom water and rose water and pour the mixture into serving plates and garnish the rice halva with ground pistachios
