Pistachio stew with red palm oil — a new recipe worth trying

Ingredients

  • Ground pistachios
  • African red palm oil (palm oil)
  • Cooked beef, cut into cubes
  • Chopped onion
  • Diced carrots
  • Diced sweet potato
  • Shredded cabbage

Method

  1. Heat the oil in a pan, then add the chopped onion and sauté until softened.
  2. Add the carrots, cabbage, and sweet potato and stir with the onion until they soften.
  3. Add the cooked meat, then the ground pistachios and stir; then add the cooked beef stock or water as desired.
  4. Bring the pot to a boil, then reduce the heat and let the vegetables simmer until tender.
  5. When the oil floats to the surface of the pot, the stew is ready.
  6. Serve the pistachio stew with red palm oil alongside white rice.
