Method
- Wash the zucchinis well and trim the tops and bottoms.
- Boil the zucchinis in water with a pinch of salt.
- Once the zucchini is cooked, drain it and place it in a deep bowl, then mash it with a pestle... During mashing, some water will come out of the zucchini; it is best to remove it and continue mashing until the zucchini becomes smooth.
- Place the mashed zucchini in a wide dish and add the tahini, then mix well. Add the salt, lemon juice, and mashed garlic.
- Mix the ingredients well with the zucchini, then pour the mixture into a serving dish and garnish with olive oil and any garnish available, as desired, such as pomegranate seeds.
