  • Chicken, bone-in or boneless
  • 1 kilo ready maghrebiya grains (miftoul)
  • Half kilo small onions
  • 1 cup chickpeas, or to taste
  • 1 tablespoon caraway
  • 1 teaspoon cinnamon
  • A pinch of black pepper
  • Salt

Method

  1. Place the chicken in a pot and boil it with aromatics—bay leaves, cinnamon sticks, cardamom pods, nutmeg, and cloves; boil the chicken until fully cooked.
  2. Meanwhile, put the dry maghrebiya grains in a pot with a spoon of oil and lukewarm water and boil them for about half the cooking time; before the maghrebiya (miftoul) finishes cooking, add a little ghee or oil and toss the grains briefly.
  3. In a skillet, sauté the small onions in a little ghee or oil; stir the onions briefly, then add the cooked chickpeas, caraway, cinnamon, salt, and black pepper.
  4. Next, drain the maghrebiya grains in a sieve; when the chickpeas and onions have come to a boil, add the chicken stock and let them simmer together to form the maghrebiya sauce.
  5. Take half of the sauce and set it aside; in the first portion of sauce on the stove, add the maghrebiya grains until they are fully cooked. Place the maghrebiya in a baking dish, put the chicken on top, and bake briefly to brown the chicken a little.
  6. Serve the remaining sauce hot with the maghrebiya when finished; you may also serve the maghrebiya without baking it if you prefer.
