Ingredients
- 1 kg loubia (green beans)
- 1 kg tomatoes
- 1 small onion
- 2 garlic cloves
- Salt
- Olive oil
- Hot pepper - optional

Method
- Cut the green beans into medium-sized pieces after removing the stem ends.
- Wash them and parboil (half-cook) them (you may skip parboiling if you prefer).
- Chop or grate the tomatoes and set aside.
- Chop or grate the onion and garlic and sauté them in oil until softened. Then add the tomatoes and let them simmer briefly. You can add 1 cup of water if the tomato juices are not sufficient.
- Add the green beans, toss with a pinch of salt, and cook over low heat until the beans are well cooked in the oil.
- Serve loubia bzeit cold at room temperature or chilled from the fridge. It is very delicious with saj flatbread and sweet green pepper.
