Lahm bi ajeen (sfiha) — especially delicious when homemade
Ingredients
- Dough:
- 1 tablespoon instant yeast dissolved in 1 cup lukewarm water
- 3 and a half cups flour
- A pinch of salt
- 2 tablespoons yogurt
- 1/4 cup oil
- Meat filling:
- Half a kilo ground meat
- 1 finely chopped onion
- 3 tomatoes, pureed with the onion
- A pinch of seven-spice mix
- 1 teaspoon hot pepper paste or chili paste

Method
- Start with the dough: mix the ingredients and begin adding the yeast dissolved in water, then knead. You may need more flour depending on its type.
- Let the dough rest well for at least 1 hour; if the weather is cold it will need more time to rise.Timers: 60 min
- Meanwhile prepare the filling: blend the onion with the tomatoes, then mix with the rest of the filling ingredients until well combined.
- When the dough has risen, roll it out on a clean surface and cut it into small rounds.
- Place about 1 teaspoon of filling (or more to taste) in the center of each round.
- Fold just the corners to seal — see photo.
- Place the sfiha on a baking tray greased with oil and bake until the dough is cooked and the sfiha are browned.
- These sfiha are very tasty served with plain yogurt.
