Recipe story
Bufalina pizza is one of the most famous types of Italian pizza. Its texture and flavor are different from regular vegetable pizza, as it relies only on the taste of tomatoes, basil, and mozzarella only.
Ingredients
- Dough:
- 3 cups sifted flour
- 1 tablespoon yeast
- 1 cup lukewarm water
- 1/4 cup vegetable oil
- 3 tablespoons sugar
- A pinch of salt
- Note:
- This quantity is enough to make 2 medium pizzas
- Sauce:
- Tomatoes
- Olive oil
- Salt
- Fresh green basil
- A pinch of oregano
- Filling:
- Fresh basil
- Cherry tomatoes with salt and olive oil
- Mozzarella cheese
Method
- We start by preparing the dough: mix the flour, yeast, sugar, and oil, and rub them together. Then add the salt and knead with lukewarm water.
- Shape the dough into 2 balls. Grease a tray with a little oil and place the dough balls in it, then cover them and let them rise for at least 20 minutes, or depending on the temperature.Timers: 20 min
- Prepare the sauce: boil the tomatoes for just a few minutes so the skin is easy to remove.
- Peel the tomatoes and blend them with the basil, olive oil, salt, and a pinch of oregano.
- Roll out each dough ball by hand to form a round disc.
- Grease a medium baking tray with oil and stretch the disc until it forms a rim around the edges, as shown in the picture.
- Spread the sauce over the dough and place the trays in a hot oven for 7 minutes.Timers: 7 min
- Mix the cherry tomatoes with salt and olive oil, and as soon as the trays come out of the oven, distribute the cherry tomatoes. Brush the dough edges with olive oil, add the mozzarella on top, and scatter a few fresh basil leaves.
- Turn on the top oven heat and return the trays to the oven for another 7 minutes (one at a time) until the mozzarella melts and the dough edges turn golden.Timers: 7 min
