Potato Kibbeh
Ingredients
- 1 kg boiled potatoes
- 2 cups fine brown bulgur, softened
- 1 medium onion, finely chopped
- 1 teaspoon cumin
- 1 tablespoon salt
- 1 tablespoon red pepper paste (pounded red pepper paste)
- 1 tablespoon finely ground red pepper
- 1 cup olive oil

Method
- Gently rub the soaked bulgur with water until smooth, then mix with the boiled potatoes and mash well.
- Finely chop the onion and sauté in a little oil until browned.
- Add the fried onion to the bulgur and potato, along with salt and spices, red pepper paste, and mix well.
- Shape the kibbeh as you like—either as a large round patty on the serving dish or as small discs.
