How to Prepare Mafrouka

Mafrouka is one of the most delicious Arabic desserts, layered with cream and nuts. It may seem challenging, but it’s actually quite simple—here are steps to make a superb Mafrouka.

Ingredients

Start here, then move straight into the method.

  • 1 cup sugar
  • 1 cup coarse semolina
  • 1 cup water
  • Three quarters cup ghee or 100 grams
  • 1 tablespoon orange blossom water
  • 1 tablespoon rose water
  • Cashews for garnish
  • Almonds for garnish
  • A pinch of pistachios for garnish
  • Ashta or qaimar, to taste

Method

Follow the cooking sequence without leaving the page.

  1. Put the sugar in a pot over the heat until it caramelizes and melts.
  2. Carefully add the water over it and stir until the sugar dissolves; then remove the pot from the heat.
  3. In a skillet, toast the semolina until it turns golden.
  4. Add the ghee to the semolina, then the orange blossom water, rose water, and the dissolved sugar; stir to form a dough.
  5. Pour the dough into the serving dish, spread it out, and let it cool.
  6. When cooled, spread the ready-made ashta over it.
  7. Toast the almonds and cashews and decorate the top of the ashta.
  8. Sprinkle a little ground Aleppo pistachio.
  9. You may serve qatr (sugar syrup) or shireh alongside the mafrouka.
