How to Make Zucchini with Eggs

Ingredients

  • 2 large yellow onions
  • 4 zucchini
  • 3 eggs
  • Salt
  • Black pepper

Method

  1. Finely dice the onion into small cubes and sauté it with a little vegetable oil in a wide skillet.
  2. Meanwhile, cut the zucchini into cubes, place them in a colander, and sprinkle with a little salt.
  3. If desired, you can gently press the zucchini to release some of their moisture, or leave the cubes whole.
  4. When the onion turns golden, add the zucchini on top and stir over low heat. Season with salt and black pepper, then cover the skillet and let the zucchini and onion cook until tender.
  5. When the ingredients have softened and cooked through, add the eggs over the zucchini and onion, but it is best not to stir the eggs so the texture of the ingredients stays intact without mixing.
  6. When the eggs are cooked, transfer the zucchini and egg mixture to a serving dish.
  7. Serve the zucchini and eggs with green salad and yogurt.
