- 1 kilo flour (about 4 1/2 cups)
- 3 cups green za'atar
- 1 1/2 tablespoons salt
- 1 tablespoon sugar
- 1 1/2 tablespoons yeast
- 1/2 cup liquid milk
- 1/2 cup vegetable oil
- 1/2 cup olive oil

Method
- Place the flour in a deep bowl and add the salt, sugar and yeast; mix well.
- Add the green za'atar (sifted, washed and chopped), then add the oil and milk.
- Gradually add warm water while kneading until you get a smooth, non-sticky dough.
- Cover the dough and set it aside to rest and rise for about one hour.
- After the hour, divide the dough into small balls.
- Let them rest again for about half an hour.
- Roll each ball into a circle, fill with akkawi cheese or any other cheese you prefer or have available (as shown in the accompanying photos), then bake in a preheated oven until cooked through and browned.
