  • 1 kilo flour (about 4 1/2 cups)
  • 3 cups green za'atar
  • 1 1/2 tablespoons salt
  • 1 tablespoon sugar
  • 1 1/2 tablespoons yeast
  • 1/2 cup liquid milk
  • 1/2 cup vegetable oil
  • 1/2 cup olive oil
  • Warm water for kneading, as needed

Method

  1. Place the flour in a deep bowl and add the salt, sugar and yeast; mix well.
  2. Add the green za'atar (sifted, washed and chopped), then add the oil and milk.
  3. Gradually add warm water while kneading until you get a smooth, non-sticky dough.
  4. Cover the dough and set it aside to rest and rise for about one hour.
  5. After the hour, divide the dough into small balls.
  6. Let them rest again for about half an hour.
  7. Roll each ball into a circle, fill with akkawi cheese or any other cheese you prefer or have available (as shown in the accompanying photos), then bake in a preheated oven until cooked through and browned.
